This is a quick and easy weekday seafood recipe using fresh salmon, scallops and AMAZING LOKARB™ Fettuccine Noodles. Since the noodles are ready-to-eat, they only need to be added at the end of the cooking to heat in the past sauce.
200 gram salmon fillets
150 gram scallops
1 large red chilli
1 chili padi (optional)
2 pouches of AMAZING LOKARB™ Fettuccine
2 garlic cloves, halved
20 gram butter x 2
1 tablespoon ghee
1 teaspoon Himalayan salt or to taste
1 cup heavy cream (minimum 35% fat)
3 slices of Gouda / Cheddar/ Edam cheese
1 teaspoon dried herb or fresh rosemary/thyme
In the same pan, cook garlic, red chilli and butter for 1 minute. Add in the remaining herbs. After 1 minute, gradually stir in the fresh cream.
Add in the cheese, cooked salmon, noodles and salt. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat and serve.
