Simple, easy-to make low-carb pasta dish soaked in garlic cheese sauce with a healthy side of tofu!
1 pack of Shirataki Spaghetti Noodles
2 cup chopped spinach
1 block firm tofu
2 ½ tbsp olive oil
¾ cup nutritional
⅓ cup hemp seeds
½ tsp garlic powder
½ tsp dried basil
¼ tsp paprika
⅔ cup unsweetened almond milk
1 tbsp tahini
Salt and pepper to taste
Preheat the oven to 400 degrees. Chop tofu into small cubes. Place tofu on a baking tray lined with parchment paper. Drizzle 1 tbsp of olive and a dash of salt. Bake for 25-30 minutes.
To a high-speed blend add hemp seeds, nutritional yeast, garlic powder, paprika, dried basil, tahini, 1 tbsp olive oil, almond milk, and salt and pepper to taste. Blend till all ingredients are combined.
On a skillet on medium heat, add ½ tbsp olive oil and spinach. Stir till spinach is cooked. Add shirataki noodles and garlic cheese sauce. Stir well.
To serve, divide the noodles and tofu evenly among 2 plates.
